Although they are very quick, they aren't exactly maneuverable. By simply turning yourself to either direction, odds are, you'll avoid the blast.
Most of the time, I find swimming past them isn't an option either, as there are usually more behind them.
When they spawn, I usually backup until they reach me, then swim forward, so I don't trigger the other fish. Then it blows up before he gets close enough to me, and I don't get close enough to the next nest to trigger it.
If try to swim past them all, you often don't trigger the next nest until you are past them, then they can catch up to you. At this point, look for a normal fish and hope you reach it before the exploder reaches you. Then it will kill the normal fish instead of you. You may still get some collateral damage, but much less.
Yes, when the greenish-yellow "blood" is shed that counts as a hit in most cases. One case I know that doesnt bleed like that is an ampeel, you jab it - nothing, but the dmg is there. After like 90 s of stabby stab stab it does go belly up.
I've never been brave enough to try this. lol
