I think about 30+- creatures and hundreds of plants. I cannot count exactly though. I still think Subnautica has too few creatures considering its massive world. But good thing is though, the creatures are so diverse and each of them has its own character, behavior and etc. None of them is a copy and paste like Abzu or No Man's Sky (except some biome-based reskins)

Wiki[subnautica.wikia.com] says:

ingame
Reaper, Crabsquid, Sea Treader, Crashfish, Crabsnake, Mesmer, Reefback, Stalker, Ampeel, Boneshark, Lava Lizard, Sandshark, Bleeder, Cave Crawler, Shuttlebug, Jellyray, Gasopod, Reginald, Oculus, Skyray, Biter, Lava Larva, Blood Crawler, Bladderfish, Rabbit Ray, Peeper, Spadefish, Eyeye, Boomerang, Tiger Plant, Garryfish, Holefish, Hoopfish, Hoverfish. (I'm counting 33).

upcoming
Sea Emperor, Sea Dragon, Warper, Ghostray, Blighter, Cutefish, Rock Puncher, Crimson Ray, Lava Boomerang, Rockgrub, Lava Eyeye. (counting 11)

I'm guessing the Emperor and Dragon will be added after some Precursor installations are in the game since they'll have a connection to the story. More variants will probably be added to the biomes as they're released (like the Lost River which has no specific fauna at the moment) but right now we do have 30+.
