If you do "finish" the game. It doesn't overwrite your save file.
In fact, your save file stays exactly where you last saved it yourself.
So if you want to experience the ending, go ahead.
When you come back to the main menu, your save file will be right there where you last left off.
Yeah just save before launching and after you see the end you can go back and pick up where left off!
To add to this just make sure you dont save inside of your rocket. Save the game when you are in the water next to your launch pad. Go in and experience the ending then reload your save and go do whatever you want. Reason i say save it while you are in the water is because when you reload the save from inside the rocket it usually does something weird. Like for me most of the time the rocket would tilt a few degrees to one side. But one or two times when i reloaded my save while inside the rocket i tried to step out and it punted me about 2K meters away.
