true that this can be kinda tricky. i just slammed a foundation on the ground and put the growbed on it. the 2 lead you need for it absolutey wont hurt

There is nothing to unlock, and there are no in-game maps. If you really want a map you can find one on the Subnautica Wiki, but the game is best enjoyed by exploring.
There are no levels to be gained, but there are things to build. To build these things you will need blueprints, resources, and a fabricrator. The fabricator is in your pod and will show you the resources you need for each of your blueprints. You need to acquire those resources.
Yes, more or less. You start the game in the Shallows biome. The pod is randomly placed for each game, so you may end up being closer to the edge of that biome than in the center. The Shallows are considered "safe." You should be able to find food and water resources without much risk of being attacked.
That is a good guess, and no the map is square. The actual map size is 4 km east/west, 4 km north/south, and 1.5 km deep, with your pod being roughly in the center. Once you get more than 2 km from your pod, the ocean continues to extend forever, but the map of the ocean bottom just ends and drops off endlessly.
You can change the Beacon color in your PDA, but not the text. You need to do that personally.
Sorry, the best you can do is create a compass (unless you want to use console commands). There are really only a couple places where Beacons are useful, so you shouldn't need that many.
I have only attempted to place exterior grow beds on Foundations. I have never tried placing them directly on the ground. For example:
