Under "Creative"
Survival. The normal one.
Freedom. No need for food/water.
Hardcore. You only have the one life.
Creative. Nothing can kill you, everything can be made for no cost, go nuts.

Other times it was just because "why not?".
Beware: exploration spoilers below
If you're playing Creative mode, I recommend a base in the safe shallows, Lost River near the giant cove tree , off of the crater's edge and in the Dunes near some of the holes where there is coral and the like. Best places for a balance of pretty environment and cool Fauna.
The second spoiler, off of the crater's edge has some spectacular fauna, and while there is no flora there, the game triggers giant leviathans that constantly try to kill you but cant damage your base. Its a super cool place to build and observe them though it is noisy as all hell
Edit: also building on the floating island is cool. I've built several above ground bases there, and since theres no water pressure you don't have to worry about the base losing pressure and leaking
If that's what you most enjoy, have at it.
You can actually still play through and complete the game's story in Creative mode just fine as well.
So keep that in mind as you play.
