Flint peoples have either better tenacity or better defense, as Kaos mentionned, they also have potentially better blacksmiths
Fang peoples have either flat or % poison resist, their tribe exclusive talents have talents to make harvesting/mining/logging more frequent (faster resources respawn) or get more from your farmlands
Any tribesmen taken from a harsh biome will have a bonus resist along their initial tribe uniques
Radiation resist if from wastelands, Heat resist if from the volcano biome, and chill resist if from the ice mountains
Tribes have no "class specialty", there is no talents that are especially good for a specific class from a specific tribe
As an example, flint tribe have an exclusive talent that make blocking with a shield interesting, but shield proficiency is a proficiency fighter AND guards are good at, hunter have less use for it though
Not an issue if a couple die whilst I seek a higher level crafter or porter for example.
Hunting for a ready made Red tagged high level NPC with often bad negatives I tried early on but have found that just using the mask to level up a red tagged NPC at lower levels is often far better in the long term.
For capturing tribesmen I lean towards "Claw" I have found some excellent guards warriors porters and craftsmen in Claw Settlements/barracks
Might just be luck ? no idea but the Claw for my game world seem to be the most interesting so far.
