I always stayed in front of the anacondas head and back pedal if necessary when fighting them.
It's a bit of both, but yeah, if you keep distance and circle around them, it should be fine. It's really easy for following tribesmen to be ensnared, but that also makes the anaconda easy target, so long as there aren't more of them.
The first couple times you get ensnared and executed from the stun is a memorable experience.
If they're going for a coil, they'll never do the bite attack either. Just avoid getting close to them.
Anancondas where moved and dmg toned down btw. In the demo they where insane.
