We have 3 monkeys and I haven't see that many fruits in the stump, I might have to grab more.

You need the Monkey Storage Nest for them to stockpile and gather. Do you have this yet?

Monkeys aren't working very well atm, very incosistent. If you want lots of fruit for recipes most can be done with guava and papaya which can be farmed.
If you want the berries just have someone on gathering all the time, (also npcs will eat berries and they will eat a lot of them so make sure you have food available closer than your fruit chest.
