bait for traps
what kind of bait is needed for the monkeys?

Killing monkeys. That's the only reason I thought they might like bananas.

Monkeys can have stashes as well, they look like tree stumps.

If not bananas, have you tried nuts and berries?
Bananas are just one food source for them.
They're not human cops subsisting on a single food (donuts) diet. /jk

I have used nuts and captured quite a few of them, pretty easy actually. Once captured put them to work for you by having them follow you, they will take off and come back with a bunch of fruits and nuts for you in their inventory. They will get into trouble and get killed eventually but while they are alive and working for you they bring back a decent amount of fruit. Some of the fruit can not be grown but used in recipes while some of the other fruits can be turned into seeds at a grinder for your own farm.

How can you set up the traps again?

I had a full-grown turkey that tripped the trap and wanted to put the trap back up, but didn't see any way to arm the trap again

For the kapybara traps, I just dismantled them and brought new traps,
until I caught at least 1 male & 1 female young one.

If you can repair them out in the field, could pick them up again /Recycle option.
Don't think we can arm traps multiple times, yet.

Potato's for Capybara and locust for Turkey's but you need to stay close by to the traps for both, the adults are also attracted to these baits and will trip the trap and damage it. If you can clear the area of adults before placing the trap you will have more time to attract the infants without worrying about the adults.

If you repair the trap it rearms it.

sadly no, haven't walked across a baby bush dog so far

I think I stole them from a small farm which is outside of a barbarian camp
but you can find seed also as loot in boxes there and sometimes at the ruins with outcast NPC
