Removal of a game from your game library isn't as simple as clicking somewhere else as intended. You'd have to:
1. Go to Steam support page
2. Select "Games, Software etc."
3. Select the said game
4. Select "I want to permanently remove this game from my account"
5. Select "Ok, remove the listed games from my account permanently"
Uninstalling a game (Deleting local files) will not remove the game from your library.
Let's suppose you're not lying. There are basically two options:
1. There was a "free weekend" for this game at some point of time (or something) - you had a specific time window to try out the game; if it runs out you won't own the game anymore. Then again, this would register as a playtime so I don't know about this.
2. All the stars did align, Mars was covering Venus, the buttered side of bread fell on the dry side, the cat landed on its back, North Korea accepted democracy, a song that didn't suck made it to the radio, you got a royal flush two times in a row, Uwe Boll made a decent movie, you logged on to a public server and got scrambled into a good team, you learned to regularly earn money by winning jackpots, lightning hit the same spot thrice, Steam glitched in a very bad time and you somehow, somehow, SOMEHOW, got rid of your game with all your stats (playtime etc). In this unlikely case, only Steam support will help you I'm afraid. They take their time with responding, so patience is the key.
