Yes, jump. That up-close melee of his (which is unblockable) can be dodged in place by jumping. He might clip your hitboxes as he slams down, but there's a bigger chance to avoid his attacks with the jump.
He takes a few seconds to recover from his attacks. When that happens, lay on him with your melee and hit a bit with the sword. Once it's glowing red, keep hitting with your sword. If you have the Aerial sword attacks, now's the best time to use it and try to juggle the boss.
Watch his color change. Because once he gets out of Bleeding, he's going to do an AOE in place. It's avoidable, just run away fast enough once he's not blinking red anymore.
The boss has a third attack once you've chopped his health down quite a bit. It's a ranged, again unblockable beam attack. Good thing, though, is it is unidirectional. One good way to avoid it is to wait until he starts charging and then start running to the sides of the projected beam path, closing as you do so (since he's going to start shooting this often). I managed to get past this attack (after getting plastered by it twice) by closing on him and jumping to the boss' back once he's charging. Free strikes :D
His charge attacks are the easiest to avoid. Just dodge (direction button + block) sideways.

I recommend you to perform the just guard for the first strike because when he jump if you block the first he will hit behind you the second, at this moment I do the Holy attack (Second step) , when he did the charge attacks the first idea I get was to performed flourish on it, the first charge flourish the second dodge and the third flourish ( if he block me in a corner I don't take the risk I dodge)
Sure it need a lot of training, after that the boss is easy even in inferno because he don't even hit you.
Dodge roll the charges and KEEP MEDIUM DISTANCE. Medium distance will make the boss do the uppercut combo.
If you get too close, he starts a punching combo that follows you even if you roll. And it hurts a lot.
Rinse and repeat.
Never more than three hits, unless you like to live dangerously. And really, don't bother trying to roll, just sprint everywhere.
It takes a bit to get a feel for it, but run -> slash -> run -> slash works well, and it's pretty safe. It also seems that you can cut the animation of the last swing short by hitting sprint, so you'll be less vulnerable. You can just sprint out of the way of every attack though, as long as you don't stop running.
