Forgive me for sucking at fighting games, but how do you block?

The AI does it a lot but I can't seem to figure it out. I've tried mashing keys (I'm using a keyboard) but nothing seems to work.

Are you talking about a regular block or the barrier block? Regular blocking is just moving away from the enemy. The barrier block is a combination of the A and B inputs (whichever you have those buttons set as on your keyboard) and the backwards movement.

Hold back to regular block. Hold back while holding both A and B at the same time to barrier block. Also, you have to crouch block to block low attacks and do standing block while blocking high/overhead attacks. Note that you cannot normal block anti air attacks when you are in the air; you MUST barrier block anti air attacks if you are airborne
