As for what they do, I have no idea. I haven't seen any noticeable difference in anything after lighting them. I'm planning on doing a run where I turn on every radio tower in hopes of seeing something different, but I'm not counting on it.
I had three times in one round that the UFO came and the tower turned green (late at night the UFO is more likely.) The first time it made me ♥♥♥♥ my pants. I asked the developer and he said it's a random event that they're working on. Since then there's a phone booth that's been added where if you answer a call there a male voice asks you to turn on all the towers to help fight the UFOs or something. When the alien talks into the phone the alien makes me laugh :D
Anyway, the UFO will kidnap you after 50 km because the demo had to end once. But if you're persistent you can get 800 km in the game without a UFO..... Switching towers has nothing to do with UFO abduction.... 🛸

I think the 800 record has been made with a bug abuse, like the timing records. The best I could get was 90 Km and it was hard. MAYBE you should be able to do 100-110Km with the right timing and a perfect Musgoat with fresh tires, full tank and some spares if you start ad dawn from 49.9 Km, but that's it.
EDIT: Ok, just found the switch in the back of the building.
