well, I mean, Elden Ring is not exactly known to be pushing graphics to the limit. It's pretty but nothing jaw dropping.
I feel like it's a cultural thing? like a Japanese mentality. Take Toyota for example. They just "refreshed" their garbage infotainment system with another garbage infotainment system with the exact issues the old one had.
just like their cars, the games are good and fun but some things they just want to be stubborn about.

Of course AC6 has ultra-wide; it takes place in the future! There was no UW support in ye olden days of the Lands Between. We're lucky they gave us technicolor.
I don't consider anything < 34" an UW monitor :)
