You want to use that sprint during a fight when trying to close distance between you and the boss so you don't spirit sprint up to him and have no stamina to hit him.
with steam input, if you really want it..., you can probably configure it so that a button press counts as push and release on a single go, if you're on a controller that is
There aren't 1000 buttons on a controller. Choices had to be made. I think everyone got used to it since Demon Souls. This "input lag" is part of the game.

I know the OP is insufferable, but he's right about one thing: even if you press briefly, there's a slight input lag due to the fact the game must detects if you want to run or roll. And that's been the case since the very first Souls game.
