When they start an attack (and so lower their shield) you release your attack and hit them...
you can also play run and hit (show them your tail and run enough to make their attack miss, then when enemy attack, you swing) keep doing this
Press the attack as well. If you land a hit just keep spamming the shortest to them attack you have . Also turn into swings to shorten their path .
Yeah I do this on Bannerlord difficulty at start when I have 0 athletics and 0 wep skills.
You can beat any NPC in the game by having them chase you; just bare outrun them, have a preloaded swing ready, as they swing and barely miss you, then YOU swing camera around while releasing attack and smack them in the face. Immediately start running away again.
Rinse and repeat 2-4 times.
If you let them get too close then just keep running away (you run faster than them if they are attacking or loading a swing and chasing).
90+% success rate for me.
