I sold them, and bought up workshops in Battanian towns, making sure there is no 2 of the same type in a town (and preferably no other in a nearby town). These towns also grown considerably in wealth by end-game as there were no wars and food shortages in their vicinity.
By now the 7 workshops made like 3500 money/day.
I sometimes filled the warehouses, but it was rare.
10/10 would not recommend investing in Sturgia.

In my current game my best performing workshop was at battanias dunglese or whatever with a wine workshop and with all the perks (but with almost no tradeskill) it yields on average 400-600 per day, the town prosperity is over 9000.
This is in beta 1.23
Also, with a buying price of like 30,000 gold, this means this workshop pays for itself in aprox 60 days.
You can manage such numbers even with prosperty lower with wineries, because world wide there is quite few of them, and a lot of grapes and wineries is centred to Battania.
But if you take all the weapons you gather fighting wars and smelt them all down, then pass them to the smiths, they'll make thousand+ a day. And I build up hundreds upon hundreds of iron and steel just melting down junk, so they can keep going for a long time.
Are you putting these in the warehouse or just on the market, because caravans will come buy the cheap goods if its on the market. Also do you have a screenshot of this, and is your game umodded?
In other words, if your workshop is not producing anything, it's because there's too much of whatever they're producing sitting in the market.
In the 1.23 beta. I got one case on video in my bug report over in tech forum. People need to stop assuming that others are dumb and dont understand how workshops work. They actually are broken.
