As far as AI mods, the ones I know of are:
RBM - Realistic Battle Mod
War and AI Tweaks
Feudal Warfare. This one is my personal choice. The mod author is working on an update for it, so more things are coming.
These three mods are not really compatible with each other, so I would pick one per game. If you don't like it, try another - probably start a new game too.
I've seen various AI mods on the nexus, but I have not used them, so I can't say how good/reliable they are. And even if a mod is old, you can still test it to see if it works.
Not an AI mod, but:
Recovery for Released Enemy Lords: This mod allows AI nobles to spawn with additional troops at higher tier. You can also grant the AI passive daily experience in every skill, allowing them to keep up with or surpass you. You can also set AI parties to get larger for every X number of kills you get. Troops can be given more HP as well.
There's a lot of ways to use this mod to make things harder on yourself.
