If you have own kingdom, you can stash them to keeps dungeon too, but they will just stay there until they break out at some point, at current state of the game.
Letting them go after fight, improves your relations with the person you let go.
Go to a friendly town/castle (not your own), open the keep, go to the dungeon and deliver them there.
In return you will get influence. For all prisoners, not just nobles.

In most cases, I think this is not especially better or worse than dealing with the ransom broker, but if you just do it as a Gift, it might cause a relation increase. I'm not sure what happens if the prisoner has no particular connection to the other noble, but in my game, I managed to convince a Khuzait to switch sides. I happened to have taken her daughter prisoner earlier. The barter option for her said "Release" instead of "Hand over." I did this, not asking for anything in return, and got a +6 relation bonus with the mother.
Nice. The Khergits flipped in my game to Vlandia. They've done pretty well for themselves, given they have a city, and only a few Khuzaits do now.
