I went one through 50+ companions until l I found:

Meanwhile the Game as is, is interesting and great imho; but me, waiting for my favorite mods, I play mostly other games that i bought but never played ...
Some are good as fighters and some are better to play fieldnurse or scout or engineer or quartermaster. And some are just better suited to be a governor.
Pay attention to their skills. High medicine means it can set as healer in your party, which reduce healing time and decrease the chance that troops get killed. High engineering then the companion can be set as engineer, which reduces the build time of siege weapons.
A scout will discover hideouts and also provide information about enemy troops.
Does your companion have skills for steward? Set it then as governor. Also, some other skills will play a role regarding governor. When you upgrade a skill and you pick then an option it's often then partyleader, governor and personal.
Besides, companions can be levelled and thus you can also shape their role. Raid hideouts, participate in tournaments or just hunt some looters or bandits or face enemy lords and your companion gain levels.
you dont need to find them in a tavern to know the statts.
companions like "the golden" or "the brave" and "the lucky" have the same skills.
