Fortunately, these are random events that are determined at the moment of birth, just like sex and culture of the baby. And although the game doesn't tell you when the baby is due, you can calculate it.
Gestation period in Calradia is one full season plus 15 days.
Thus, if you are so inclined, you can take a save just before the baby is due, and if you don't like the results, you can reload and try again.

Also wife died (once) during birth, although "death" was disabled : biggest rage-quit ever !
I've had that happen a couple of times even though death was disabled.
If your wife dies in childbirth, all you need to do is reload. No need to rage quit.

After that death:
I now literally write down in a real life Book the time of conception and I follow the "full season + 15 days" and 2 days before i make a hard save and wait in the city/castle were my beloved is.
Fortuitously, never happened again ...
If you're on mainline, you need to wait somewhere together. I think in beta, it is now possible to get pregnant just by travelling together.
Here's what I do --
My spouse is usually the governor somewhere, usually my best fief. I go there, make a save, and then wait.
And wait.
And wait.
If things go well within about a month, great. If she isn't pregnant within a month or so, I reload and go to waiting again.
Keep Calm and Reload On, I always say.
Usually, I have my two brothers and their spouses doing the same thing. We are all in what I like to call, the begetting stage of the game.
Current playthrough I have 15 potential heirs -- five little Sturgians each from my spouse and my two sisters-in-law.
