For newcomers, which mods might be good for the game experience?

The native mod that comes with the base game.

It depends on what exactly you're looking for in terms of content but if you're interested in becoming a bandit/crime lord then there's the awesome 'Fourberie' mod. it allows you to set up a criminal enterprise and basically become a crime lord. You can do loads of things with it like scamming citizens, robbing them, heck once your criminal enterprise is big enough you can even run schemes targeting specific nobles to discredit them or even assassinate them. I have a lot of fun with that mod but it can take a bit of getting used to.

I would also recommend 'Improved Garrisons' as it makes managing the garrisons of your fiefs so much easier once you get to that part of the game. It gives you fine control over troop recruitment and upgrading letting you send out recruiters to gather specific types of troops for your garrison.
