The type of wanderer is connected to the culture of the village you get the quest in, but all the female companions can and will spawn from this quest, so every khuzait wanderer type will spawn from khuzait villages and so on.
You can complete the quest anyway you want to, the kicker is to not leave the village after finishing talking with the wanderer, but to immediately re-enter and talk to her and hire her.
You aren't able to access her inventory immediately, but once you send her away on a quest and she comes back, it is accessible.
When you find the quest at the quest-giver village you can save before accepting the quest and accept it, if it spawns a wanderer type you don't want you can re-load, travel a short distance on the world map just enough to make time pass, and re-enter and accept the quest and it will spawn a different companion.
The companion spawns with all her focus and attribute points unattributed, but there is an in-game check at the next mid-day, I.E. when wages are paid and such, if you are able to find and hire her before then you are able to distribute them yourself, give them 10 INT and 5 steward if you want.
Lastly from grinding this quest it seems bound to certain villages, possibly to make sure khuzait villages don't give out empire wanderers and such.
They are silly expencive compared to other companions.
