Can you play as Female?
Can i play as Waifu instead of looking some old mans hairy ass?

Yes you can. Actually females are playable in all previous mount&blade.

Yes you can. Also maybe don't make your male character old and don't look at his ass. Really there's multiple ways around whatever issue it is you have.
