Is there any sort of stealth system?
I ask because I want to play as the Battanians using ambush tactics. Does the AI need to have line of sight with soldiers to know they are there? If I remember correctly, the AI was omniscient in Warband.

The claim is that the AI "uses all the same information you have", so in theory they might account for line of sight, but they haven't said anything about line of sight explicitly. The exact quote:

The formation AI has access to the same interface and set of commands as the player. In other words, our combat AI doesn’t cheat! It uses every piece of information that a player would have access to (although, perhaps slightly more detailed and accurate than a player’s guesstimates) to make its decisions.

No, but we can jump around like a ninja! Seriously though, if npc's have some kind of line of sight, it might be quite possible.

There isn't even an ambush mechanic on the strategic map yet as far as I know.

It's possible there is some sort of ambush feature since there is mention of something like this from the gamescom demos (some people looked through all the skills and the descriptions) however taleworlds have not discussed or mentioned any such thing so we can only wait and see.
