Its not an issue to be solved. The OP just forgot about battle sizes.
Battles are short because armour is borderline useless, so troops die extremely fast.
Thats if the AI is even using decent troops and isnt 90% recruits as per usual.
They have good recruits now, that was patched ages ago.
If not mods will cover that.
Currently there are mods that add more of strategic approach to battle engagements, were its not just a charge at each other.
Generally Horse Archers still charge with the mods, while Cav move up on the flank with infantry.
When ranged infantry get within range, then Cav generally charge, then infantry move in to mop up. You can customise engagements with the mods to play out differently.
If an army doesn't have a balanced unit formation, then things can play out different.
But of course as mentioned, if you set your battle limit to 100 then you will have multiple small engagements.
