Once you die it should give you the option to jump to her.
EDIT: to ensure your dynasty, a really good idea is to get your wife pregnant, and then put her in an incredibly secure town or castle (300-400+ garrison, level 3 walls). Keep it away from the front line. Baby will be born, wife stays alive. If you were to die, just jump to wife.
Also, try to marry those in their 20s when you are in your 30s, it gives you more time and you can always jump to her.
I did not pick my sister as heir, will I be able to play her once I die ?
I've read some threads about people getting stuck and not playing anyone.
My current one I will play until dead, but he probably has twenty years yet.
I don't know about other people but I would only like deaths in game when I actually pick the death option.
Some clans need more younger children at the start to come of age and take over.

a Pop-up screen will appear when you die and will let you play as that character. In this case it be only your sister on the list. Choosing an heir is quite misleading because thats not how it works. You choose someone as your heir in real life before even you get old. So in game its just ''Choose a new character'' screen. So dont worry.

Good they delay because it gives you right up until the line for a child to make it to being an adult, and be chosen. Starting a character at 18 would be great.
