Do doctors stack?
I have two Docs and one is the clan surgeon. Do their skills stack or no?

No, only the stats of the surgeon will be used
If you assign the other to lead his own army, his stats will apply to that new army so technically you can make use of both

I fired the lower skilled one. Had to make room for that early game engineer...

It doesn't seem like the engineer makes any difference in my game.

Even see my character's engineering go up when building siege, although really slow since 2 INT.

Some of the perks seem to stack, such as walk it off and best medicine. The healing rate of wounded will increase if you have more companions with those.

Your engineering will still go up even if you have an engineer, implying that your character isn't just sitting on their ass eating all the grapes while your troops set up a siege. :-P

If your character is wounded you can mouse over your health and see how much extra healing you're getting from surgeon/party. Don't know how accurate it is, but you can kind of get an idea if multiple companions with medicine skill affects your personal healing rate at least by adding/removing them from the party.

I'll check it when I get on later with the dev console.

I have 23 companions in my party (mod) all with medicine of over 600 (another mod). After a particularly difficult battle, waiting in a town my party was healing 60 wounded soldiers every in-game hour, which means everyone was back on their feet in no time at all. I had healed up nearly 200 wounded soldiers in 4 ticks.
I noticed that it only works like that when waiting in settlements. Before I reached the town, only about 3 soldiers were getting healed per tick.

That depends on the perks too. There is a mod where you can select their perks remotely (no need to be in our party).
If you're a always on the move guy, pick the walk-it-off perks. 10% faster healing rate while moving and the High Morale Heal boost perk (10% more heal when high morale).
