How do party (companion) skills work?
I have a hard time understanding how companion skills affect parties. There are 4 roles which use these skills (I think):

Quartermaster - Steward
Surgeon - Medicine
Scout - Scouting
Engineer - Engineering

So if you assign a companion to a certain role, their skill in that role will be used instead of yours.

But is that it? For example, if you have a companion with high rougery skill and you raid a village, will you gain any benefit from the companions rougery skill?

AFAIK, these "Role" skills apply across the entire Clan. If they're not in your party, any bonuses might be severely reduced, but they are supposed to still apply "AFAIK." At least, that seems to be the intent. It is confusing, though.

As per "Warband" the Perks should read "exactly" as they work. Some of them need a rewrite to be more specific.

From here: https://www.pcinvasion.com/mount-blade-ii-bannerlord-skills-perks-and-leveling-guide/5/

"Eye for Loot – +5% loot from village raids; party member effect"

That would mean that if the Companion is not in the Party, you don't get any bonus. If they are in the Party, you do.
