EDIT: Oh, I'm always on a horse doing my thing, gotta stay mobile and see better from higher up than a foot soldier.
When that doesn't work, I sometimes use the "Follow Me" command and walk up in a line, while my troops pepper the enemy with arrows. That always gets them to advance towards my position. We fire arrows into their faces as they approach, then I order "Charge" just before they close with my shieldwall. That typically breaks their morale in battles where I'm not vastly outnumbered.
At other times, I'll lead my mounted troops to distract and harass the enemy as they approach my shieldwall. Then I'll strafe the field, riding behind their lines, hitting them in the back, taking out their archers, etc.
Edit : I will always flank hard L or R and get good verticle overlook of the field as troops move in. Then I find the lords and send cav in to hit flanks

until it becomes dangerous then i sit back and go afk for a bit (cant afford to die since you never know if the ai taking over slaughters your army)
But I've made another character, made her an Archer.. and now I hang back with range... I'm finding that it's easier to control infantry if your directly behind them looking after them then a mile away with the other cavalry...
