This is really basic but
I found that just placing them behind a shieldwall of infantry whilst giving them elevation if possible was my favourite tactic as its easy and seems to work very well. I'd take cavalry to the flank, wait until the infantry almost meet mine then charge them in.
but as mentioned the moment the melle clash happens its no longher viable and i mostly need new ideas what to do then (currently had them join the fray and tryed to flank both were kinda bad with them charging in probably being the better choice)
i am somewhat thinking of spreading my infantry out into small circles so they might get surrounded but keep the enemy infantry there and my archers would be capable of shooting then
but no idea if it works (sounds kinda stupid) and it would be a lot of creating custom troops every time i play so if it does not work its pretty ♥♥♥♥
Try to position your archers so they will have a clear line of sight on enemy troops(melee) and will shoot while melee units fight each other.
AI is really stupid and will go in straight line for your units from the start of the battle(usually, sometimes they just sit in one place).

The most important thing is to stay alive. If the AI gets control of your units in large scale fights, it's basically gg. In small scale, if you can control infantry, try setting your infantry in front of your archers to square formation instead of line. Square is like shield wall, but the small surface area means more enemies come around your infantry and give your archers a better angle.
Also, I like to only take infantry with shields, so that square formation and shield walls actually work.
(or my fights are just to small still mostly sitting in small fights with 300 maybe 350 units max unless i ♥♥♥♥ up)
And well i guess i gotta get more used to giving orders
usualy every order takes me like 2 seconds sometimes up to 5 to execute so guess i gotta practice it
