These take time to build a solid profit. Give it an hour or so and they should be fine

Does the vicinity have a bandit problem? I had a silversmith in Sanala (two breweries for that town comes highly recommended; it has absurd amount of grain coming in from nearby villages and both make 240+ dinars daily) ... anyway I was following the villagers providing the silver ore to the town and there was a friendly minor faction attacking them before they could get to the town...

To me pottery shops are the best, no matter if a clay village is near, i have one in Ocs Hall, Pen Cannoc, Marunath and Pravend all making on average 500, in some days i have seen 800. I have tested breweries in towns with grain, jewelry stores in towns with silver ore, smiths in towns with iron ore and hardwood but ultimatelly pottery shops bring the most profit and pretty fast. Maybe it's a bug but in my game nothing beats pottery shops.

The prosperity of the town factors in as well. Get a town that is not heavily contested and has a prosperity over 5k.

That is correct too, i only go for high prosperity towns to buy a shop.

The town's current economic condition... the banditry nearby... raids against the village... and subsequent loss of prosperity in village affecting the production of resource goods, etc etc.

All of these affect the productivity of your workshop. If the workshop is not making enough money, the most common and immediate causes are that there are bandits or hostile parties nearby disrupting the villagers with logistics.

Debatable, i have set a smithy in Marunath which has hardwood and iron ore two of the raw materials required for a smith shop and was barely making 200 dinars, changed to pottery shop and in a matter of days was making 500 dinars, the bandits were the same i believe.

In theory it should be like you say but it is not the case in the current state of the game.

Pottery = Dyes from Warband.

There can be a huge advantage by setting other workshops though.
Say there's a town with 2 grain, you set 3 brewery there, beer would be dirty cheap.
Then once you're passing near the area doing your collect of goods to sell, grab all the cheap beer to sell elsewhere for a good profit margin.

You don't need to hold the workshop after you've set them as this, just sell them away.
Also since you get trade exp based on profit margin, then it also helps to lv up trade.

Beyond that, pottery spam (with some distance between your actually workshops)
