I did that too. Be in a kingdom and raid a village and start a war.
Or you have your own kingdom and add some laws when you have below 100 influence

Im my own kingdom raided then attacked enemy army, boom, -251

If you have your own kingdom, get the policies "Council of the Commons" and "Feudal Inheritance" for massive amounts of influence per day. Council of the Commons alone is giving me 192 influence per day.

Hey i had the same problem with influence i had like -400 influence and all i did was donate prisoners for half an hour and got around 100 influence

What is "donating prisoners" ?

Well when you win a fight you can take prisoners with those prisoners you can donate them to an allied town/castle and that will give you influence points. First you get prisoners then you go to an allied settlement then go to keep , dungeon and select donate prisoners

its not a bug actually. I mean if you want to get back from -400 influence to 0 this is one way to do it
