Will TaleWorlds remove smithing stamina?
I don't see a reason for players to need to wait in a town for a couple seconds in order to start smithing again after you used your stamina. What's the point?

To prevent you from getting absurdly wealthy without any meaningful investment. Otherwise it's just too easy to rack in gold that way, especially once you grind to higher level of refinement.

That said, I do wish they brought back passive stamina regeneration outside of staying in town, because that's a limitation I don't like. It's not like my character can't rest while traveling, and the purposeful tying the player to a settlement just to grind smithing is annoying.
How does it stop the player some getting obsurdly wealthy quickly? All I have to do after running out of stamina on me and my campanions is to wait in a town for around 10 seconds.

Huh? I've spent like 100 days smithing with 5 companions and maybe made like 10k gold off of it. Which is like 1/100th of my total gold that I've accrued from a couple seiges that took less in-game time than that. The cost of crafted weapons is heavily penalized, it's not even worth selling unless you're literally at the start of the game and utterly penniless.

Smithing, the way its implemented is more like a chore of infinate grind, and not really fun or intutively rewarding at all. Breaking down a completely wooden sword some how nets you a steel spear head schematic. What I would suggest is that breaking down a weapon gives you the part designs of all the parts on said weapon.

Once you get some decent combat skills (or a bunch of ranged troops), you could cheese looters not just for all the renown and xp points, but also easily-upgraded crafting materials.

At least that's my observation from my 0.0.4 "smith" playthrough. It wasn't as lucrative as cheesing tournaments, obviously, but it was something that did not rely on presumably-to-be-fixed broken combat AI, either.
You can already do that though, all you have to do is wait in a city for a bit.

it would be nice if the smithing skill also increased the max amount of stamina by 1% per skilllevel

Could have weapon shematics as a quest reward.

Scrap stamina and change the XP awards for different smithing functions...forging more advanced items netting far more XP than burning wood.
