As mentioned mules, camels and sumpter horses are pack animals and does not count towards upgrades.
No you don't. Faction of horse doesn't matter. There are 3 types of horse:
1. Sumpter Horse/Pack Mule/Pack Camel. These do not increase speed and cannot be used for upgrading a cavalry troop. They increase carrying capacity for your party, and having a small carried weight to capacity ratio increases speed.
2. Horses. These can be used to upgrade any troop to cavalry that requires a "horse." If you have these in your inventory they increase speed up to a point. Don't go over 1 to 1 soldier.
3. War Horses. These can be used to upgrade any troop that requires a "war horse." I believe these increase speed same as "horse" but am unsure.
