It must be a bug, no way they designed it like that on purpose

How many days of food do they have, and how many do you have? You could try paying them again intermittently until they need to disperse to go get more food. The AI doesn't like to assault without having siege equipment built, which gives more time.

350 vs 850 is bad odds in an open field battle, but during a siege? You should be able to beat them. At least in reality and in Warband - admittedly I haven't played any sieges in Bannerlord yet.

Well, they didn't lie to you. They are lifting the siege! Afterall, once you're gone, there will be no need for a siege!

...but really, it's probably a bug.

It's definitely a bug, but 300 vs 850 isn't the worst odds I've seen beat in a siege, you might still be able to pull off a victory. Especially if they don't use siege equipment. If they bring a battering ram, one of my favorite tricks is to wait for them to bash down the main gate then open the inner gate, let a dozen or so people rush in, then close it to cut off the rest of the enemy forces until those dozen or so people are dead, then rinse and repeat until they finally break the inner gate.

When the AI cheats, you cheat right back.

You should win easily if you turn all the difficulty things right down to 1/3, probably even 2/3. Still might even win on realistic if you've got the right troops. Check their troop comp, they might have like 300 recruits.
