"The Mount & Blade II: Bannerlord Original Soundtrack is composed of 61 original tracks, divided into two discs.
The first disc contains 31 tracks ranging from the Bannerlord Theme to recordings used during Combat and Campaign gameplay. They are grouped by culture and similarity and were composed by Periscope Studios.
The second disc contains 30 Tavern tracks composed by Ensemble Galatia. They include 6 exclusive short introductions to the Calradian cultures that are not available in the game.

Their youtube channel haven't been active in a long time it seems, but they do music for games and such..
The soundtrack used in the release trailer of the game is from "Two Steps From Hell" afaik.. (oif which done music for a lot of games, movies and such).

Remember, its more economical sound for game studios to contract music work external. Doubt any game studio or publisher out there have their own inhouse orchestra etc.
Look it up,there are videos of the creation of the tracks,the people who played them,the instruments they used etc...they are amazing.
