Infantry for example
There are several things to consider
Armour
Shield or 2-hander
Sword or Axe
Throwing weapon, Axe or Harpoon
The Legionary has the best armor in the game but i find it fails almost utterly to Sturg, infantry and frankly the Batt spearmen do a good job of winning as well.
2-Handers can be devastating in careful maneuvers (Flanking) for are trash as front liners.
Swords.... swords are... Trash! There trash. Swords are good in broken battles with small fights taking place all over, but the AI does to use loose formation on their infantry.
The almighty Axe on the other hand is fantastic for just about any situation. YES the reach is for worse on most, but that is actually a good thing. Most of your fights are gona be a giant mosh-pit, being one blob against another out in the field or in taking/holding a wall. They just fair a hell of allot better, kill faster, rip through shields and tear apart door and gates with ease.
Infantry with throwing weapons can often decide who wins before the lines even touch. They usualy only get 1 volley off before crashing into each other but the difference is in the pile of corpses this makes of the front line, and the people retreating. Cav too. It's just that useful. But weak against larger shields.
Harpoons are a better weapon as they deal more damage and travel farther i have noticed.
Empire Legionary - Are hard to kill and will survive much but wont win much against throwing and axe-men.
Sturgian Veteran Warrior - Axe and Harpoons. they are a one stop shop of horrors and will obliterate your Legionary but suck mightily against Cavalry of any kind. They also have a hard time understanding what shields are used for.....
Battanian Trained Spearman - Axes, Spear, Shields - probably the best infantry shields in the game. These guys are the most versatile bastards you can have. The armor is not the greatest but that doesn't seem to matter much at all in any situation i have put them into. Due to the shields being so tall, more of an actual full body cover, even harpoons and arrows have trouble finding a home.
I use these guys against Sturgians.
Khuzait Darkhan - Spear, Sword, Harpoon, Shields - A good contender, but i have yet to acquire a large enough force to see just how much so, The shields are smaller so they are weaker to range.
Aserai Mameluke Palace Guard - Massive 2-hand axe, Sword, Throwing axes, Good armor. When used well, they will rack up the kills faster than any other. Not good for sieges.
Infantry: (Vlandia) Vlandian Voulgiers, hands down the best Melee Unit in the entire game. Absolutely annihilates any other melee unit, does decently against cavalry, and high hitpoints and armor make them good vs. ranged as well.
Archers: (Empire) Palatine Guard. Doesn't do anything different than all other veteran archers (All have Bow Skill 130), but has better armor -> Lives longer.
Cavalry Troop (Vlandia) Banner Knight. Beat Cataphracts, who are the only other contenders for this spot. They even do well enough against dedicated anti-cavalry units, which says a lot.
Cavalry Archer (Khuzait) Khan's Guard. Not much to say, all the noble Units are top tier apart from Sturgia maybe.
So swords are kind of realistic. Besides Roman Legionnaires, the mainstay for most was spears.
