sumpter horse vs mule vs pack camel
is there any difference? why would I have mules or camels when I can have sumpter horse for a fraction of price?

As far as i saw it no big difference other then if you ride it (and well the looks)
then agein i run around with 100 camels since i always find them and they are dirt cheap for me (sometimes going for around i think 9 is the lowest i saw) sumpter horses i would have to buy at i think 18 is the lowest i saw
so no difference other then where to obtain them/price in different regions

There does seem to be a difference. It looks like mules have the least weight capacity while sumpter horses have a higher capacity and speed. Not sure about the camels though.

sumpter horses seem to affect herd less it could be cos 1 herd can be larger than if you're using 2 herds not to sure but if i have a mix of mules and sumpters i can have less of them before getting a herd malus, where as if i go all sumpters i can have more ( not tried all mules yet because they're more expensive then the pack horse) as for weight capacity when you add each they both seem to add 100 weight despite what the info tab implies when talking about carry load, though i believe the carry load on the info is about when mounted ( i haven't really seen camels to comment . . .i did loot 2 camels but that was about it, 1 war camel and a normal one, war camels can't jump like horses do was a difference i noticed

All animals / horse types effect the herd penalty the same. You're allowed 2 animals per troop. A cavalry's mount counts as 1.

All pack mounts give +100 carry capacity.

All regular or war mounts give +10 carry capacity.

They’re all the same in terms of carry capacity, which is +100.

Otherwise, it’s aesthetics. You shouldn’t be riding these in battle.
