There's a console command with the dev console mod that outright just GIVES you a settlement. You could use those to get their fiefs.
When captured lord, click on him and there will be option to execute
Just siege a castle nobody but one or two weaker lords care about to draw them in then swoop in on them, it's like printing experience and loot.
That's what I've been doing so far to stop the steamrolling. However I've heard of them getting sold from dungeons, so I've kept them with me and executed them when the list got too cluttered. Tidying up with Marie Kondo.(I should make my next game with that name lol)
To execute, go to the party prisoner list and click on the person to open the small menu to reveal a red button.
