keeping surgeon character out of battle

How? They tend to charge into fights too, any way to protect them?

assign them to different 'roles'/ control groups (or what they are called), archers for example and use a bit of micro in battle
you can do that by clicking on the roman numbers in the party screen

If you don't want them to fight at all you could do what breakdown suggested but assign an unused number like 8 or 9 and tell them to retreat at the start.

A lot of warband mods had options to tell companions not to join a battle at all, hopefully that will be implemented here soonish.

By any chance do you know who the surgeon companion is and where to find them?

Press "N" ImCaligula and then select Heros. Go down the list and select 'Wanderers' . All the companions are listed there and you'll find at least 2 with high surgeon skills. When you click on the one of your choice it'll tell you where to find them. If they're on the other side of the map they may be in one of the nearby cities if they're not in the last place seen.
