Generally, I'd say it doesn't so much stay hard as it stays unyieldy and unsatisfying.
I know which bosses you're talking about. I've finished this game several times before repurchasing it for steam. I'm interested in joining the Sabbat this go around. My last guy was nice and good and I almost joined them to see how that affected things but I backed out at the last second. This time I will join them and see what happens.
I also rarely had issues with boss fights. :/
If you want to use guns I suggest using the Clan Quest mod. It has great new gun mechanics & weapon changes. Also, no limit to how fast you can fire your weapon. I hated having to wait 2 seconds each time I fired my .38. It also makes weapons more lethal so kindred (including you) will take more damage from guns.

Pretty much this. Although even without the mod you're still good to go. Guns are just a slow start but become rather solid after a bit of advancement. Until then the game is generally easy enough imo.
