Wow! I caught something even you weren't aware of? I'd feel proud if it wasn't so frustrating. And, of course, thank you very much for your work on The Unofficial Patch.
Where your config.cfg file is depends on what patch or mod you are using. If using an Unofficial Patch it will be Unofficial_Patch\cfg\config.cfg, for Clan Quest it will be CQM\cfg\config.cfg, etc, etc. If you don't know for sure, just do a search for "config" from the root game folder and edit all the cfg\config.cfg files you find.
When you are done the line should look like: bind "MOUSE2" "+use"
Then you will have to search for MOUSE2 again to find the discipline line it was bound to and change that to your preferred key. I can't tell you exactly how that line will look because it will again depend on what patch/mod you are using.
But an example line from one of my UPs and swapping MOUSE2 with e the line would be: bind "e" "vm_discipline"
