for me I usually stand in a door way the one corridor that has no door so they are forced to come to me. It takes patience but eventually you get them. I found trying to chase them was far too annoying .Bloodheal helps a lot. I stand in the corridor /door just out of reach of anything they can range. It forces them to have to come to you. I used a meat hook on them. If you don't have that chose your fastest sword. If you do not have bloodheal then it's difficult blood pack help but you have to manage them . However forcing them to come to you also gives you control on being ready for when they do appear to try to avoid being hit. They will almost always land behind you. Others might have a differant strategy.

Be constantly on the move and sidestep whenever they attack you from the front. High defense helps in deflecting blows. Never enter the arena in the middle, or they will unleash the spiritual fireball attack, which deals huge and angry damage. Use a fast weapon, such as Katana. Hit one of the two first with a flurry of hits, don't alternate between them, so as he teleports away and then attack the other one. Be prepared to immediately turn backwards, since they love teleporting behind your back. The stairs is the ideal place to fight.

Also, this is one fight where block is actually slightly helpful.
If you can't dodge when one of them blindsides you, hitting block is faster and more reliable.
You'll still take damage, but not as much, and you can run away after.
