ToME I find more fun for a long, tedious slugfest where everything is constantly on the brink of instantly killing you. Doing a lot of hard work comparing stats and trying to figure out which of two items with completely different but both very good stats is best to use.
Stone Soup is what I go to for a more classic Roguelike adventure, charging through a deep dungeon with more simplistic stats and options and becoming a god who slaughters all in my path. :)
Though to be fair... Ancient Domains of Mystery blows both of them out of the water. LOL!
But yes, each has its own feel to it. Which is why I like them all. It's a matter of what you're in the mood for.

ADOM has some hella annoying flaws, like kill-magical-number-of-hyenas and then they all instantly become death machines.
Also the only game where you can rip someone's arm off and beat them with it. Lol. The main DF mode is better than adventure mode right now though. Hopefully in twenty years Adventure mode will be fantastic XD
Adom is a great game but the author is self centered, censors and has a poor work ethic. His new team are aces though.
I think there are a few games where you can do this. I know certainly in the old 90s PC action/adventure Bioforge you can beat an enemy with his own severed arm, but I can't remember how the arm was severed. I think it's already severed when you find him from him trying to escape, and there's an energy field that cuts it off or something.
