There is this mod though:

It moves the threat level of the enemies from the health bar, in to the top left corner of the enemies square. It's not a big change, but it's at least a little more noticable, and doesn't obscure the HP too.
Pay more attention.
Also learn to use Track/Precognition/Arcane Eye/whatever scouting skill you have access to (most characters have outright access and even if you don't you can pick one up escorts)
For those classes that start with magic or a staff you can still betray the escort if you remove all magic / spell based skills and unequip your staff before you switch to a new zone.
once you get the escort quest just select the Betray to zigur option and then equip your staff and put points back into your spells.
that is also how i got access to the town of zigur while playing as an archmage.

Should work with the current version, just have to switch the UI to metal if you use the UI MOD with it.
