Do add ons disable achievements?
The amount of achievement in this game is staggering and fun to chip away at on top of everything else but I also wanna get into all these cool things in the Workshop. Do I have to worry about disabling achievements if I go wild with them?

Nope, go wild. Addons don't disable achievements, unless specifically mentioned maybe. I'm no addon expert, but I can't think of any that do disable them. You can use the most cheaty addons you can find and get all the achievements with that if you want.
Remember that the workshop here on steam is limited in what it has available. A lot of people post their addon on the game's forum, which can be found at te4.org

Is there any way to sort the addons list in the official website other than by upload date?

No idea sorry, you'd have to ask somebody with more addon or website experience. I play vanilla myself and I only use the website to look at webchat or people's characters.
