Max Air refers to the air bar that pops up when you walk on tiles that are deep water. Normally, with the exception of Yeek, your air bar is capped at 100. If you are wearing something that increases max air, then the cap will go up, meaning you can spend more time on deep water tiles without drowning.
There are also a few enemy abilities that can affect your air bar, like constrict, but I have never encountered a single enemy that got even remotely close to making my character suffocate that way.

And don't forget, you can right-click creatures and inspect them, to open their character sheets as well.
I have a stat on my weapon called: Phasing. What does it do?
Only thing I could find on the wiki is there is a magical buff called:
Out of Phasing- The target is out of phase with reality, increasing defense by X, resist all by X%, and the duration of all detrimental timed effects by X%.
I'm guessing it increases the resistances when Out of Phase?
If you are, I would recommend turning the mod off until you feel more familiar with the game.
