Serious answer: As long as they return to positive HP before the battle ends they will remain alive. Spells like Healing light work for this purpose as well.
The two good giant sacreds are Niefel Giants from Niefelheim and Rephaite Warriors/Anakim/Gibborim from Hinnom/Ashdod/Gath. Only the Rephaite Warriors and co. are really worth a E major bless in addition to a N major bless. And I still prefer scales builds for those nations, as giant soldiers are usually fine without a bless that kills your ability to recruit them in enough number to form a line. Having your flanks turned is ♥♥♥♥♥♥♥ fatal, even for giants.
Haven't played too much Fomoria yet, but their recruit everywhere mages seem like fairly obvious air evokers. Troopwise your fir bolg are actually some of the finest in the game if you consider their stats and cost. Ignore them at your own peril. Their goat headed warriors don't seem too good, but at least they're size 4 so you can fit a fir bolg there too. No idea about their sacred cap giant troops. They're certainly no niefels.
If I were to start an MP with Fomoria I'd take a look at the nemedians. They seem fairly interesting. Cap only, but not sacred and they're stealthy. So you can mass them a bit and do some sneaky raiding with them. Sure you're no TNN or Van, but then people probably don't expect too much stealthy shenanigans from you either.
If I had to do it over again, I wouldn't have gone with the expensive death buy on the Horned One, but the fact that he is stealthy can make for an interesting stealth strategy.
