How to choose the language, on Steam Deck?

I've tried on my desktop and the game is in Italian. Ok.
I've tried on my Steam Deck and the game starts in English. Well, also ok...
but I would rather choose it.

I'm pretty sure my deck language, on its preferences, is Italian.

No, there is no language tab in the steam game->properties.
No, there is no language selection inside the game settings.
Yes, I know the game is not still verified on Deck, but despite this, it seems to work.

Some Ideas?

For the PC problem, the answer is here. Brief: takes the language you type in, not the system language. Click the link and you're golden

My post is and was meant for the Steam Deck, the challenge is there is Linux on that. I searched already nad knew of the window solution in the other post you linked.
